Are you ready for some football?
Since Super Bowl is this Sunday I wanted to share another of my family’s favorite party recipes – Parmesan Garlic Artichoke Dip. This dip is a thicker, chunkier artichoke dip, and is full of rich creamy flavor with a really great bite. I personally love the garlic in it… yum! Pair it up with some pita chips or tortilla strips and you’re ready for the game!
I almost called this “Spicy Garlic Artichoke Dip,” but I thought perhaps it wouldn’t be quite as spicy as some people like it, so I opted for “Parmesan” instead. Feel free to spice it up just as much as you like by adding extra cajun seasoning or tabasco. I know everyone has a different view of spicy!

Parmesan Garlic Artichoke Dip
Ingredients
- 2 cans quartered artichoke hearts, chopped (2-14oz cans water-packed)
- 1 1/2 cup mayonnaise
- 1 can green chilies, chopped (4 oz.)
- 1/3 cup green onions, chopped
- 2 cloves garlic, minced
- 1 1/2 cup parmesan cheese, grated
- 1/2 teaspoon Luzianne cajun seasoning (or tabasco)
- 1/2 teaspoon lemon juice
Optional
- 2 tablespoons parmesan cheese, grated
- 1/4 cup tomato, chopped
Directions
| Step 1 | |
| In a large bowl mix together chopped artichoke hearts, mayonnaise, chilies, green onions, garlic, 1 1/2 cups parmesan cheese, seasoning, and lemon juice. | |
| Step 2 | |
| Spread into a 1 1/2 quart baking dish. Sprinkle with 2 Tablespoons grated parmesan. Bake in a 350 degree preheated oven for approximately 30 minutes, or until edges are golden brown. | |
| Step 3 | |
| Remove from oven and if desired sprinkle with chopped tomatoes. Serve warm with pita chips or tortilla strips. | |

I love the idea of adding in the cajun seasoning to add a little bit of heat to the dish. I find that a lot of artichoke dips tend to be too creamy so the spiciness would be a nice addition.

Hi Emily, You could definitely make it without the chilies. You might want to add a touch more of mayo to replace some of the moisture loss, but otherwise it would only make it a bit milder, but still yummy!
